Lentil Stew with Buttered Noodles

I didn't create my favorite lentil stew recipe from scratch; I adapted it from The New Moosewood Cookbook by Mollie Katzen.  If you're looking for a meal that is somehow both light and hearty, gentle and flavorful, then this is the dish for you.  It is a rich, subtle, complex stew that my whole family loves.

(Please note that I tagged this as a "vegan recipe" because the stew itself contains no animal products.  Obviously, if you serve it over noodles tossed with butter and cheese, it becomes merely "vegetarian.")

Lentil Stew with Buttered Noodles

1 lb dried lentils
7 cups of water
6-8 cloves of garlic, minced
1 medium onion, chopped
2 celery stalks, chopped
2 medium carrots, peeled and diced
4-6 fresh basil leaves, torn
oregano and freshly ground black pepper to taste
3-4 ripe plum tomatoes
1 lb hot cooked macaroni
1 tablespoon butter
1/2 cup shredded sharp white cheddar cheese
sour cream, for serving

In a large soup pot, bring the lentils, water, and salt to a boil.  Reduce heat to medium low, and simmer for 20 minutes, partially covered.  Add the garlic, onion, celery, carrots, basil, oregano, and black pepper.  Simmer another 20 minutes, partially covered, stirring occasionally.

While the beans and vegetables are cooking, bring a medium saucepan filled with water to a boil.  Drop the tomatoes in for 20 seconds, take them out, peel off the skins and squeeze out the seeds. Chop the remaining pulp and add to the stew.  Let the stew cook for at least 10 minutes more. 

Toss the hot macaroni with the butter and cheese.  Each diner should ladle stew over a bowl full of noodles, then top with sour cream.

Serve with homemade bread.
