I adapted these Scrumptious Double Chocolate Peanut Butter Brownies from David Lebovitz's Absolute Best Brownie Recipe, a longtime favorite of mine. They were amazing - rich, chocolatey, and nutty. Best of all, they came together in no time!
Scrumptious Double Chocolate Peanut Butter Brownies
1/4 cup natural peanut butter
2 tablespoons butter
2 1/2 cups semi-sweet chocolate chips, divided
3/4 cup sugar
1 teaspoon vanilla extract
pinch of salt
2 large eggs, at room temperature
1/4 cup white whole wheat flour
In a large saucepan over medium heat, melt together the peanut butter and butter. Add 1 cup of chocolate chips, stirring continuously until smooth. Remove pan from heat, and stir in the sugar, vanilla, and salt. Beat the eggs in vigorously, one at a time. Add the flour and mix for 60 seconds, or until the batter turns glossy and pulls away from the sides of the pan.
Fold in 1 cup of chocolate chips, then spread the batter into a buttered 8 inch square baking pan. Sprinkle with the remaining 1/2 cup of chocolate chips. Bake at 350 degrees for 30 minutes, or until set. Do not overbake. Allow to cool completely before cutting.
